Where do your products come from?
A grass fed market is a fairly new concept in Europe and is almost inexistent in Italy. We are just beginning and for now our meat comes exclusively from Italy from the mountains near Austria. Soon we will have other grass fed animal products such as lamb and pork (again from Italy). We are searching for grass fed butter which will probably come from Austria. Eventually we hope to add duck, chicken and eggs to our catalog. It's probabile that soon you will also be able to purchase non-animal products from us such as coconut oil and alternative flours like almond flour, flax meal and coconut flour.

Wouldn't it be easier for me to purchase meat locally?
No. A lot of farmers/ranchers like to use words like: free-range, organic, natural, but the truth is that these factors do not have much significance if the products that are sold come from animals who have been even partially fed wheat, corn, barley or other cereals even if they are organic. Take a look at the nutritional profile When animals are not fed grains during the final months of their life, the results are:

  • Decreased total lipid content by 43%
  • 288% greater vitamin E content
  • 54% greater b-carotene content
  • Twice as much riboflavin
  • Three times as much thiamin

    Isn't the price of your meat expensive?
    Absolutely! But not by any market standards. Only because we believe that healthy meat, such an important food, should be easily obtainable by everyone if not even subsidized by the state! Instead the foods that are the least healthy (both for us and nature) are often subsidized by governments. We do everything we can to not run up useless costs to be able to offer you superior products at reasonable pices.     Will my meat be delivered fresh?
    The meat you order will be vaccum packed and delivered by courier with refrigerated vehicles where the cold chain is respected at all times. The meat will arrive at your door within two to five days. A more precise time will be indicated at the time of the order. The meat will keep for up to 5-6 days in the refrigerator, but we recommend freezing it the day it arrives.

    Our offal on the other hand, which needs to arrive much quicker due to its shorter shelf life, will be shipped in a special cold box. The addition of frozen gel packs or sinthetic ice maintain the offal at a safe temperature for up to 48 hours or more. Offal will be delivered by express courier within 24/48 hours.

    Most companies that deliver fresh food use polystyrene boxes or liners. Polystyrene is made from petroleum which is not a renewal resource. We have chosen a new and much more ecological solution for our offal.  Woolcool packagingFind out more about organic wool.

    How should I conserve my meat?
    The various cuts of meat will be vaccum packed separately. You should open the packs and divide them based on your family's needs. For example, if you have a family of three, divide the steaks into groups of 3 and put them in freezer baggies. Press the baggies in order to remove all the excess air and close them with twist ties or zip locks. For the best quality, we advise that you place all the packs in the freezer at the same time and do not open the freezer again until all the meat is frozen completely so that it freezes as quickly as possible.

    Could plastic alter the taste of the meat?
    No. However, pay attention to not use freezer bags that contain BPA. Some people prefer to use glass containers, which is the best method for conserving food products. In the future, we hope to have various products for meat conservation and freezing in our catalog (delivered to you directly by the manufacturer or distributor).

    How should I defrost my meat?
    The meat, in order to not dry out and become tough, should be defrosted slowly and not left in the heat. You should remove what you need from the freezer the evening before and place it in the refrigerator so that it can defrost slowly without reaching a dangerously warm temperature that can permit bacterial growth. Absolutely do not refreeze the meat once it is thawed.

    How long will the meat last once it is defrosted?
    Once the meat has been correctly defrosted in the refrigerator, it should keep for 3-4 days as long it is kept fresh. Offal, on the other hand, must be consumed within 2 days. See the table

    Do you have suggestions for preparation?
    Before cooking the meat, it should be removed from the refrigerator and allowed to reach room temperature. 15-20 minutes should be sufficient. Before cooking the meat, use a paper towel to absorb any humidity on both sides and sprinkle organic salt on both sides. Allow it sit for 10 minutes. Procede with cooking based on the cut of meat; slow or fast.

    What is the best way to cook steaks?
    The number one thing to remember: do not overcook. Our 100% grass-fed beef is leaner than grain fed, so it takes about 30% less time to cook and is best cooked medium-rare to medium. A tip for grilling steaks: while the meat is reaching room temperature, prepare the grill. The best way is to place a cast iron grill in the oven set at high temperature until it is very hot. Turn on the flame on your stovetop and place the hot grill over it. Place your steak on the grill with no oil and cook for 5-6 minutes on each side. 5-6 minutes will produce a rare steak, 6-8 minutes a medium steak depending on the thickenss of the cut.
